Beef and Broccoli

I have always enjoyed this dish in an oriental restaurant, and having found myself with too much broccoli, I searched for how to easily use it up. The ingredients list seems long, but actually it does not take much time as there is no marinating the sliced beef! It gets the flavour from the sauce ingredients. You will obviously notice that there is NO rice. We are trying to cut back on rice these days…

Better-Than-Takeout Beef with Broccoli

  • 1 to 1.25 pounds flank steak, sliced into thin strips, no more than 1/4-inch thick
  • 1/4 cup cornstarch
  • 3 tablespoons olive oil, divided
  • 2 tablespoons sesame oil, divided
  • 4 cloves garlic, pressed or nicely minced
  • 1 to 2 teaspoons ginger, or to taste (fresh or dried is okay, use less dried than you would fresh)
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup water
  • 3/4 cup dark brown sugar, packed (light may be substituted)
  • 4 to 6 cups broccoli florets (dependent on preference for broccoli)
  • 2 to 3 green onions, sliced into 1/4-inch-long segments
  • red pepper flakes, optional and to taste
  • sesame seeds, optional for garnishing

To a large zip top bag, add the steak, cornstarch, seal, and toss to coat. Set aside while preparing the sauce.

1 To a medium saucepan, add 1 tablespoon olive oil, 1 tablespoon sesame oil, garlic, ginger, and heat over medium-high for about 1 minute, or just until garlic is fragrant, taking care not to scorch it.

2 Add the soy sauce, water, brown sugar, and stir until the sugar has dissolved. Bring to a boil and allow it to boil for about 2 to 3 minutes. Then reduce the heat to low and simmer for about 5 minutes, or until slightly thickened and reduced. While it simmers, sear the steak.

3 To a large skillet, add the remaining 2 tablespoons olive oil, 1 tablespoon sesame oil, and the steak. Cook over medium-high or high heat until steak is cooked through, about 5 to 7 minutes, flipping the pieces intermittently to ensure even cooking.

4 Add the broccoli.

5 Evenly drizzle in the soy sauce mixture, noting it will bubble up dramatically. Toss the beef and broccoli to coat evenly with the sauce. Simmer for about 3 to 5 minutes at medium-high, or until the broccoli is as crisp tender as desired.

6 Optional — If your sauce hasn’t thickened up as much as you’d like and your broccoli is done or nearly done, and you want a sauce that clings better and isn’t as thin, simply dissolve 1 tablespoon cornstarch in 1 tablespoon water (called a slurry), add it to the skillet, stir for about 1 minute, or until your sauce has thickened to your desired level. Since I used 6 cups broccoli, the natural water and juices that escaped from it thinned out my sauce, so I needed to use a slurry.

8 Turn off the heat, add the green onions, and stir to incorporate.

Optionally, evenly sprinkle with red pepper flakes.

Cheesy Ranch Chicken and Broccoli Bake (KETO)

Alas, we have succumbed to the Keto Diet which requires us to eat very few carbs, lots of protein, veggies and some fruits. Beginning today you will see Keto friendly recipes. This is not to say they aren’t tasty!! I am a novice here and still in the early stages of figuring out what is good and bad. Help me!! If I post a recipe which you know is not KETO please let me know. I need your help… You know if I post it, it must have at least tasted good…LOL. Here we go….

Cheesy Ranch Chicken & Broccoli {Keto & Low Carb Friendly}
Ingredients
• 2 cups cooked chicken breast (3 small breasts)
• 2 tablespoon of butter
• ½ pack ranch seasoning mix (see below )
• 4 oz. cream cheese, softened.
• ¼ cup heavy whipping cream
• Broccoli (Costco pieces – steamed
• ⅔ cup chicken broth
• ¼ cup crumbled bacon
• ½ cup cheese
For the Topping
• 2 cups cheese
• ½ cup crumbled bacon
Instructions
1. Kasey* cooked her chicken first in a slow cooker on high for 3.5 hrs. (Boiled mine for 10 minutes)
2. Remove from slow cooker (or the pot) and shred.
3. Preheat oven to 350 degrees.
4. In an oven-safe skillet, melt 2 tablespoons butter.
5. Add ranch seasoning, cream cheese, heavy whipping cream, chicken broth, ¼ cup crumbled bacon and ½ cup cheese.
6. Use a whisk to combine ingredients and cook on low for 5 minutes.
7. Steam broccoli in the microwave while the ranch mixture is cooking.
8. Add chicken and cooked broccoli to ranch mixture and stir to combine.
9. Sprinkle 2 cups cheese and ½ cup crumbled bacon on top.
10. Cook in oven for 25 minutes then move to top rack.
11. Cook on broil 2-3 minutes until cheese is bubbly and bacon is browned. (I skipped this)

Dry Ranch Dressing Seasoning Mix (I used the whole recipe)

  • 1 tbsp dry Parsley
  • 1 tbsp Dill
  • 1/2 tsp ground black pepper
  • 1 tsp onion flakes or dry minced onion
  • 1 tsp onion powder
  • 1 tsp garlic powder

Broccoli Chicken Divan

Once upon a time I had a similar recipe, bit it must have flown the coup with the chicken…LOL. Pinterest to the rescue again! I think you will enjoy it in its simplicity. I served this with some fresh asparagus which I cooked in the same water as the broccoli, I just kept it simmering after I removed the broccoli.

Broccoli Chicken Divan

Ingredients

  • 1 pound chopped fresh broccoli
  • 1 1/2 cups cubed, cooked chicken meat ( I used leftover supermarket roasted chicken!!!)
  • 1 (10.75 ounce) can condensed cream of broccoli soup ( substituted Cream of Mushroom)
  • 1/3 cup milk ( I used evaporated milk for more creaminess)
  • 1/2 cup shredded Cheddar cheese
  • 1 tablespoon butter, melted
  • 2 tablespoons dried bread crumbs

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Place the broccoli in a saucepan with enough water to cover. Bring to a boil, and cook 5 minutes, or until tender. Drain.
  3. Place the cooked broccoli in a 9 inch greased pie plate. Top with the chicken. In a bowl, mix the soup and milk, and pour over the chicken. Sprinkle with Cheddar cheese. Mix the melted butter with the bread crumbs, and sprinkle over the cheese.
  4. Bake in the preheated oven for 15 minutes, or until bubbly and lightly brown.

 

 

Ultimate Vegetable Soup

Blame it on Costco! Too many great vegetables luring us to buy them. The result…better cook these before they spoil! Pinterest to the rescue, another great recipe worth sharing.

Ultimate Vegetable Soup

Ingredients
1 onion
3 cloves garlic
2-3 carrots
1 zucchini
1 1/2 cups cabbage (I skipped the cabbage this time)
2 cups broccoli
2 cups cauliflower
1 1/2 cups sliced mushrooms
1 1/2 cups cut green beans (frozen or fresh)
1 1/2 cups peas (frozen) (didn’t have any)
1 1/2 cups corn (frozen or canned)
Large handful spinach, or more (skipped this too)
15 oz. can diced tomatoes (and/or fresh)
8 cups vegetable broth
Salt to taste

Directions
Prep veggies: mince garlic and dice onion, carrots, zucchini, mushrooms. Roughly chop cabbage if using, and cut broccoli and cauliflower into small bite-sized pieces.
In a large stockpot over medium heat, saute onion for 5-7 minutes. Add garlic and cook 30 seconds.
Add broth, tomatoes with juice, and all veggies (except spinach if using).
Increase heat and bring to a boil.
Reduce heat, cover, and simmer for 20-30 minutes or until veggies are desired tenderness.
Stir in spinach or not, and salt to taste.

*Notes:
Vegetable soup freezes wonderfully!
The frozen veggies work great as “fillers” if you want to quickly and easily add more veggies.

Chicken Divan

Chicken Divan is a chicken casserole usually served with broccoli, almonds, and Mornay sauce. It was named after the place of its invention, the Divan Parisiennne Restaurant in the New York Chatham Hotel where it was served as the signature dish in the early twentieth century. Its creator, a chef named Lagasi, created it as part of a contest, winning a small amount of money and creating their signature dish. Source – Wikipedia

I actually really like chicken or turkey divan and it is pretty straightforward to prepare. If I don’t want to cook my own chicken or turkey I sometimes buy a roast chicken or turkey breast at the deli counter and chunk it up for this recipe since it starts with cooked chicken.

Chicken Divan Prep time 45 mins Cook time 30 mins Total time 1 hour 15 mins

Ingredients • 4 chicken breasts, cooked and shredded (or head to the Deli)

• 2 to 3 heads broccoli (while at the deli grab some florets too)

• 2 cans cream of chicken soup (any cream soup will do except cheddar)

• 1½ cup mayonnaise

• ⅓ cup sour cream

• ⅓ cup chicken broth

• 2 teaspoons lemon juice

• ¼ teaspoon curry (or up to 2 teaspoons, to taste)

• 2 cups shredded cheddar cheese

• bread crumbs, or Ritz crackers, crumbled

• cooked rice, for serving

Instructions

Cut broccoli into florets and steam until just tender, about 2-3 minutes. place broccoli in the bottom of a 9×13 pan. in a large bowl, combine cream of chicken soup, mayo, sour cream, chicken broth, lemon juice, curry, cheese and shredded chicken. pour chicken mixture over broccoli and top with a sprinkle of bread crumbs or crushed Ritz crackers. bake at 400 for 30 minutes. serve over rice.

Turkey Divan

With US Thanksgiving fast approaching, as well as Christmas (44 days), thoughts turn to turkey. I have previously posted a great recipe for preparing turkey which originated with Emerill Lagasse — check out Funky Brined Turkey elsewhere on the blog. Its awesome and I have used it for many years. AFTER US Thanksgiving and Christmas, there will undoubtedly be some leftover turkey. You could make pot pies, but who wants to fiddle with a crust? Turkey Divan is the perfect answer for leftovers!! The following recipe was adapted from Anna Olsen, Food Network Canada.

FYI, if you don’t have leftover turkey, just head down to the deli and get a precooked roasted turkey breast and either bring it home to slice or have the butcher cut thick pieces. Don’t use turkey lunch-meat!!! You could also substitute chicken… enuf said…hope you enjoy this one.

Turkey Divan by Anna Olsen Food Network Canada
Ingredients (my changes in red as always)

3 cup fresh broccoli, cut into florets (and peeled stem pieces)
4 Tbsp. butter
1 medium onion, diced into ½-inch pieces
1 red bell pepper, diced into ½-inch pieces
5 Tbsp. all-purpose flour
2 tsp Dijon mustard
2 tsp chopped fresh savory (I could not find any here)
1 tsp each thyme and oregano
2 tsp finely grated lemon zest
2 cup chicken stock
½ cup half-and-half cream
½ cup dry white wine
2 cup Jarlsberg cheese or Manchego if in Mexico
salt & pepper
1 lb. cooked turkey breast meat (not luncheon meat), sliced
2 Tbsp. chopped Italian parsley
½ cup dry breadcrumbs
1 Tbsp. olive oil
Directions
1. Blanch broccoli in boiling salted water (or steam) until just tender, then shock in ice water to halt cooking. Drain broccoli and set aside.
2. Preheat oven to 400 F.
3. In a large sauté pan with sides melt butter over medium heat. Add onions and sauté until almost translucent, about 4 minutes.
4. Add diced pepper and sauté 3 minutes more. Sift flour over vegetables and cook, stirring constantly, for about 4 minutes, until a faintly nutty aroma is emitted, but flour does not brown.
5. Stir in mustard, savory and zest. Stir in chicken stock, ½ cup at a time, blending well after each addition (this will prevent lumps). Bring liquid up to a simmer, then stir in cream.
6. Return to a simmer and stir in wine. Reduce heat to low and stir in 1 ½ cups Jarlsberg or Manchego cheese until melted. Season to taste.
7. Stir in broccoli and turkey, adjust seasoning if necessary, stir in parsley and pour into an 8-cup casserole dish.

This can be prepared to here and refrigerated until before dinner when you can apply the topping before baking. I usually put the refrigerated dish on the counter to warm it up a little before baking.
8. Sprinkle top with remaining ½ cup cheese mixed with breadcrumbs and olive oil. Bake for 15 minutes, until sauce is bubbling along the sides.
9. Serve over cooked rice or buttered noodles.
10. Alternatively, the half-and-half cream can be replaced by ½ cup mascarpone cheese, for a more decadent version.

Serve it with a great Jasmine rice!

 

Grant’s Chaya and Broccoli Soup (hot or cold)

We have just finished two great bowls of this recipe which I got from my friend Grant,  and it was awesome amigos! Fortunately, for us in Mexico ‘chaya’ is widely available. It is used in many of the same ways that we used to use spinach. Try it in lasagne or in a smoothie for breakfast or just steamed.

Grant’s Chaya and Broccoli Hot or Cold Soup

Ingredients –

1 large onion

2 large cloves of garlic

1 liter of low fat chicken broth

5 to 10 chaya leaves (or spinach)

1-2 carrots cut up

Broccoli florets (should remain covered by the liquid)

½ cup powdered milk with soy protein (I substituted with a little real milk, mixing it with potato starch instead of the cornstarch)

1 T cornstarch + some water

handful of cilantro stems and leaves

Sauté in canola oil, a large onion and two large cloves of garlic. I like some of the onions to have turned brown and the rest translucent. Add a quart of low fat chicken broth and if you have available, five to ten leaves chaya* leaves, bring to a boil and add a carrot or two, cut up. After five minutes of cooking add enough broccoli to come up to the top of the liquid. You can’t put too much broccoli in. Return to boil and let simmer for five to ten minutes. Throw in a half a cup powdered milk fortified with soy protein. (or the potato starch and milk) Mix a heaping table spoon of cornstarch a bit of liquid (unless you used the potato starch already) and throw that in. Throw in a bunch of cilantro and then plunge in a hand blender and liquefy the whole mess.  If you prefer a chunkier variety, do not blend it until pureed. Serve hot or cold.   We put a dolop of Larry’s homemade tzatziki on top….mmm. If you don’t mind the fat you could use a little grated cheddar…
