Crabmeat Salad

Many restaurants offer crabmeat dishes, but in reality, what they are calling crabmeat is actually Alaskan pollock, aka surimi.. “So what is surimi?”, you ask.

Surimi is a minced fish paste, made from a cheap fish in abundant supply, usually Alaskan pollock, frequently mixed with sugar and sorbitol, a sweetener.

I actually like using surimi due to the fact that it is much cheaper than the real crab meat! I recently bought a large package of surimi sticks at Costco. I sometimes eat a stick just because it tastes so great. Having bought so much of it, I decided to make this salad for lunch.

Crab Salad (Surimi)

Ingredients

  • 1 pound imitation crab meat flaked style, or sticks cut into slices
  • 1/2 cup celery finely chopped
  • 3 tablespoons red onion finely chopped
  • 1/2 teaspoon Old Bay seasoning
  • 2 teaspoons lemon juice
  • salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons fresh dill chopped, plus more for garnish

Instructions

Add all of the ingredients to a large bowl. Stir gently to combine.

Serve immediately, or cover and chill for up to 2 days.

Sprinkle with additional chopped dill for garnish if desired.

Weeknight Bolognese Sauce with Zoodles

Checking the pantry and freezer, I found I had all of the ingredients for this sauce, including a very nice medium zucchini for spiralizing. I also had a pound of ground veal which I had not put in the freezer since I bought it two days before. You can use beef or whatever…

Weeknight Bolognese Sauce

Ingredients

  • 2 teaspoons olive oil
  • ½ cup onion, finely diced
  • ½ cup carrots, finely diced
  • ½ cup celery, finely diced
  • 3 cloves garlic, minced
  • 1 pound ground veal
  • 1 teaspoon kosher salt
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon dried basil
  • ½ teaspoon dried Italian seasoning
  • 2 Tablespoons white wine
  • ¼ cup milk
  • 1 14.5 ounce can petite diced tomatoes
  • 2 Tablespoons tomato paste
  • 1 pinch baking soda
  • Zucchini noodles or the pasta of your choice
  • Romano or Parmesan cheese for serving

Instructions

1. In a large sauté pan, heat the oil over medium high heat.

2. Add the onions, carrots and celery to the pan and sauté until softened stirring often, about 4-5 minutes.

3. Add garlic and sauté stirring often until fragrant, around 1 minute.

4. Add the ground veal and sauté using wooden spoon to break up the meat as it cooks until the veal is fully browned, around 5 minutes.

5. Add salt, crushed red pepper, dried basil, dried Italian seasoning, wine, milk, diced tomatoes, tomato paste and baking soda and stir until well combined.

6. Bring to a boil and reduce the heat to medium.

7. Simmer uncovered for 10 minutes stirring periodically.

8. Serve immediately over zucchini noodles or pasta with a sprinkle of Romano or Parmesan cheese.

Sausage Stuffed Acorn Squash

Thanksgiving has passed for us Canadians. American Thanksgiving is coming up very soon. I have been viewing an interview with the president of Butterball who was stating that this year in particular, turkeys would be much larger birds as a result of a shortage of workers to process turkeys during COVID, which resulted in turkeys growing much larger before they were sent to the processors. Small turkeys between 10 and 12 pounds will be extremely hard to find this year! And it definitely is squash season.

If you are not into a traditional Thanksgiving with turkey and all of the trimmings OR if you are not a large family but just a couple, then this could be perfect as a smaller dinner. You could make it vegan using no protein at all!

Sausage Stuffed Acorn Squash 4 servings

Ingredients

  • 2 medium acorn squash
  • 1 tablespoon olive oil, plus more for brushing onto the squash
  • 1 yellow onion, small dice
  • 1 red bell pepper, small dice
  • 2 stalks celery, small dice
  • salt and pepper
  • 1-2 teaspoons chopped fresh thyme or half a teaspoon dried
  • 3 cloves garlic, minced
  • 1 lb mild or hot Italian sausage, casings removed
  • 2 cups torn curly kale
  • ¾ cup freshly grated parmesan cheese, divided

Instructions

1. Preheat the oven to 400 °F and line a large baking sheet with parchment paper.

2. Slice a small piece off the top and bottom of the squash so it can sit upright, then slice the acorn squash in half width-wise (not through the stem). This will result in a pretty scalloped edge. Scrape out the seeds.

3. Place the squash halves on the baking sheet and brush with olive oil. Turn upside down (seed side down) and roast for 25 minutes or until the squash is fork tender.

4. Meanwhile, make the filling. Over medium heat, warm 1 tablespoon of olive oil in a large nonstick skillet. Add the onion, bell pepper and celery and sauté until onion is softened and turning translucent, about 3-5 minutes. Season with salt and pepper.

5. Stir in the chopped fresh thyme, then add the minced garlic and sausage. Continue to sauté for another 8 minutes, or until the sausage is fully cooked.

6. Place the torn kale on top of the sausage mixture and cover the skillet to steam for 1-2 minutes. Stir and re-cover to continue steaming the kale, if necessary. Once the kale is wilted, stir in half the parmesan cheese and remove the pan from heat.

7. Once the squash is done roasting, remove them from the oven and turn the heat up to broil. Flip the squash bowl side up and divide the filling evenly among them (pile it high, they’ll be overfull), then sprinkle on the remaining the parmesan cheese.

8. Broil for 2-3 minutes or until the cheese is melted, making sure not to over-brown the squash.

Serve immediately and store any leftovers in a sealed container in the refrigerator. Eat within4 days.

Smorgasbord of Leftovers

Fast approaching the new year...FINALLY! With two holidays in such a short period of time there are bound to be leftovers. Am I right? Indeed we had leftovers from both Christmas Eve and Christmas Day at this point. No turkey in this house this year, but we did have hamand roasted duck. I raced to Pinterest as usual and the results were both quick and easy – Classic Split Pea Soup and Duck, Duck Soup. Both were great for the cooler days this holiday season.

  1. Classic Split Pea Soup

Ingredients

1 medium yellow onion, diced

2 tablespoons vegetable oil

2 ribs of celery, diced

3 medium carrots, peeled and roughly chopped

1 to 1-1/2 cups diced ham

4 cups low-sodium chicken broth

2 to 3 cups water

1 lb (about 2-1/4 cups) dried split peas (I used a jar of cooked white beans)

1 bay leaf

Salt and freshly ground black pepper

Instructions

Heat the vegetable oil in a large pot over medium heat. Add the onion and celery and sauté until soft, 4 to 5 minutes.

Add the carrots, ham bone, diced ham, split peas, chicken broth, 2 cups of water and bay leaf to the pot.

Bring the soup mixture to a slow simmer and cover, leaving the lid slightly askew.

Cook, stirring occasionally, until the peas have broken down completely and the soup has thickened, 50 to 60 minutes.

Remove and discard the ham bone and bay leaf.

Stir the soup to blend thoroughly and if necessary, add more water until the thickness of the soup is to your liking.

Season to taste with salt and pepper and ladle into bowls for serving.

2. Rachel Ray’s Duck Duck SouP

Ingredients

Bones from cooked duck

1-quart chicken broth

2 cloves garlic, crushed

4 slices ginger

3/4-pound bok choy, sliced OR spinach

1 1/4 cups shredded duck meat

1 1/2 cups cooked rice

1 scallion, sliced

Preparation

In medium pot, simmer bones, broth, 1 cup water; garlic and ginger for 25 minutes; strain. Remove any residual meat from the bones. Return to pot with remaining ingredients; simmer 5 minutes.

Salmon Loaf

Ok…here’s another salmon recipe just because we got a fresh supply of canned wild sockeye salmon from our Canadian visitors. Wild sockeye from the west coast is quite different from Atlantic salmon in colour and taste.

And since our friend is both gluten and lactose intolerant, this recipe from Pinterest was a great choice. We served it with some fresh steamed Brussel sprouts and a great yellow rice. Hope you will give it a try!

Salmon Loaf

Ingredients

  • 2 tablespoons olive oil (coconut or macadamia oil are also great)
  • 1 large onion, finely diced
  • 1 large celery stick, finely diced
  • 1 large carrot, peeled and finely grated (or 2 smaller carrots)
  • 2/3 teaspoon sea salt
  • 1/4 teaspoon white pepper
  • 1 large clove of garlic, finely diced
  • 600 g of canned salmon (3 x 213 g / 7.5 oz cans, drained with larger bones removed)
  • 3 eggs
  • 3 tablespoons almond flour
  • Zest of 1/2 lemon

Instructions

Preheat the oven to 175 C/ 350 F.

Heat olive oil in a large skillet over medium heat and add the onion and celery. Sauté for 2 minutes, stirring once, and then add the grated carrots. Season with salt and pepper and cook for 5 minutes, stirring a few times. Add a couple of tablespoons of water when it feels like the oil has dried up. Finally add the garlic and cook together for another minute or two.

In the meantime, drain the salmon and remove any visible large bones. Don’t worry too much about the smaller bones or the skin as it will blend in just fine. Add the fish to a mixing bowl and flake with a fork or your fingers.

Add the cooked vegetables to the salmon. Grate some lemon zest, add the eggs and almond flour and mix everything together with a fork. Make sure the egg is well incorporated.

Grease a medium loaf tin with a little coconut oil (make sure to brush all sides with oil). Transfer the loaf mixture to the tin and press down until well compacted and even on the top. I like to bang the tin against the bench a couple of times to get rid of any air pockets inside the mix. Then place in the oven, middle shelf, uncovered, for 30 minutes.

 

Chicken Tortilla Soup

What to do when you buy a Costco or grocery store rotisserie chicken and have leftovers? SOUP.

DSC_0003-2  This will easily feed 4 to 6 people as a main course. The ingredients list seems long, but it can be simplified by making the changes noted in red.

Chicken Tortilla Soup

INGREDIENTS

  • 1 Rotisserie chicken (half chicken is enough)
  • 1 15-ounce can Black beans (drained)
  • 2 Carrots
  • 2 Celery stalks
  • 3 tbsp Cilantro, fresh
  • 2 cups Corn, frozen (1 small can or corn or more)
  • 3 Garlic cloves
  • 1 Lime, wedges
  • 1 cups Peas, frozen (1 small can of peas)
  • 1 Poblano peppers (Optional)
  • 1 Red onion
  • 1 Reserved red onion
  • 28-ounce can Tomatoes
  • 4 cups Chicken broth
  • Salt and freshly ground black pepper
  • 3 tbsp Taco seasoning (see elsewhere o the blog for homemade taco seasoning)
  • 1 tbsp Olive oil, extra-virgin
  • Crispy tortilla strips or crushed tortilla chips
  • 1 Jalapeno, seeded and minced

DIRECTIONS

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrot and celery, and sauté until the vegetables start to become tender, 5 to 6 minutes. Add the Poblano peppers and cook until the vegetables are very tender, 6 to 7 minutes more. Add the jalapeño and garlic, and continue to cook until fragrant, 1 minute more.
  2. Season the vegetables with the taco seasoning, then stir in the tomatoes and chicken broth. Bring the soup to a simmer over medium heat. Reduce the heat to low and simmer until a good flavor develops, 20 to 30 minutes.
  3. Stir in the chicken, black beans, corn and peas. Return the soup to a simmer. Season with salt and pepper. Serve with tortilla strips and just maybe, a touch of sour cream.

Chicken Pot Pie Soup

I LOVE chicken pot pie! I dont make crusts…LOL. Nor can I buy the store-bought crusts here. With some leftover Costco roasted chicken, I yearned for pie. FYI…Bisquick isn’t available here either. Turning to my trusty Pinterest, I found this recipe. It was awesome!!!! I left out the mushrooms and added chopped red pepper… The diced veggies looked great so I added a photo of them too!

CHICKEN POT PIE SOUP

COOK TIME: 15 MINS

INGREDIENTS:

  • 4 Tablespoons butter or olive oil
  • 1 medium onion, peeled and diced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, peeled and minced
  • 1 chopped red pepper
  • 4 ounces button or baby Bella mushrooms, diced
  • 1/3 cup all-purpose or white whole wheat flour
  • 3 cups chicken stock
  • 2 cups milk
  • 3 cups shredded cooked chicken
  • 1 pound Yukon gold potatoes, diced (I used a can of diced potatoes)
  • 1 cup frozen corn (I used a small can )
  • 1 cup frozen peas (I used a small can)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly-cracked black pepper
  • oyster crackers (instead of the crust)

DIRECTIONS:

  1. Heat butter in large stockpot over medium-high heat until melted (or heat the olive oil until it is shimmering).  Add onion, carrots, peppers and celery.  Saute for 6-7 minutes, stirring frequently, until the onion is soft and translucent.  Add in the garlic and mushrooms, and sauté for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant.
  2. Stir in the flour until it is completely combined, and saute for an additional 1 minute, stirring occasionally.  Gradually add in the chicken stock and milk, stirring frequently.  Stir in the chicken, potatoes, corn, peas, Italian seasoning, salt and pepper until combined.
  3. Bring the mixture to a simmer (be careful not to bring it to a boil!), stirring occasionally so that the bottom of the soup does not stick to the pan.  Then reduce heat to medium-low, and continue simmering the soup for 10-15 minutes until the potatoes are soft and cooked through.
  4. Taste the soup and season with additional salt and pepper, if needed.
  5. Serve immediately, with crackers on top or on the side, if desired.

Slow Cooker Creamy Tortellini Soup

Ingredients

  • 500 grams | 1 pound ground Italian sausage (or ground chicken, turkey or beef), browned*
  • 1 brown onion, chopped
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 2 teaspoon beef bouillon powder (or chicken)
  • ½ teaspoon salt
  • 4 cups beef broth (or chicken or vegetable broth — I use low sodium)
  • ¼ cup cornstarch mixed and dissolved in ¼ cup water
  • 3x 340 gram | 12-ounce cans full fat evaporated milk or half and half
  • 1x 340 gram | 12 ounce packet three cheese tortellini (I used one of Costco’s, remember)
  • 5 cups fresh baby spinach (whatever amount works for you)
  • 1 cup milk

Instructions

  1. Place the browned sausage, onion, carrots, celery, garlic, Italian seasoning, beef bouillon powder, salt, and broth in a 6-quart / liter slow cooker bowl. Cover and cook on high for 4 hours or low for 7 hours.
  2. Uncover and skim any fat that is sitting on the top of the soup with a spoon; discard. Stir in the cornstarch mixture with the evaporated milk (or half and half or cream). Add the tortellini and mix well. Cover again and cook on HIGH heat setting for a further 45 minutes until the soup has thickened, and the tortellini is soft and cooked through.
  3. Add in the spinach, pressing the leaves down to completely submerse into the liquid. Cover again for a further 5-10 minutes until the leaves have wilted.
  4. Pour in milk in ⅓ cup increments, as needed, to reach your desired thickness and consistency (I needed 1 cup); taste test and season with extra salt ONLY if needed, and pepper to suit your tastes.
  5. Serve with crusty warmed bread

Corn and Black Bean Dip x 2

Bonus day today as I have two similar recipes, one of which originated from our “sister” Jean in Peterborough, Ontario. She served it while we were visiting for her sons wedding in August. It has a great fresh taste when served with tortilla chips.

The second I ran across while waiting for Jeans recipe to arrive. The ingredients are very similar, with the exception of the avocado and the dressing.

  1. Corn and Black Bean Dip from Jean Johnston

1/2 cup sugar
3/4 cup apple cider vinegar
1/2cup olive oil
1 tbsp water

1 can lentils
1 can corn
1 can black beans, drained
1 cup each celery, green pepper and green onion
Jar of pimento ( I used red pepper because I didn’t have any pimento)
I added a few fresh spices. Her daughter suggested adding fresh cilantro which makes sense.

Mix all together and soak for at least 3 hours.  Drain and serve.

2. Black Bean, Corn and Avocado Dip

Prep time: 15 minutes Yield: 20 servings Serving size: 1/4 cup

Ingredients

  • 15 oz can black beans, drained + rinsed
  • 15 oz can yellow corn, drained + rinsed
  • 2 avocados, cut in half, pitted + cubed
  • 1 red onion, diced
  • 1 red bell pepper, chopped
  • ⅓ cup white wine vinegar
  • ¼ cup fresh cilantro, chopped
  • 1 Tbsp garlic, minced
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • juice of one lime
  • salt and pepper, to taste

Instructions

  1. Place all ingredients in a medium size bowl and mix until combined.
  2. Refrigerate until ready to serve.

Thai Style Chicken Pumpkin Soup

Just in time for your Thanksgiving dinner! Make ahead and refrigerate. Serve as your first course!

Thai Style Chicken Pumpkin Soup

  • 1 tablespoon extra virgin olive oil
  • 6 boneless skinless chicken breasts or thighs cut into 1 inch cubes
  • 1 large white onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 T. minced fresh ginger
  • ½ to ¾ teaspoon crushed red pepper flakes
  • 2 stalks celery diced
  • 2 carrots, peeled and diced
  • 15 ounce can pumpkin
  • ½ cup mango nectar
  • ½ cup fresh lime juice
  • ½ cup peanut butter (or more)
  • 1 liter low sodium chicken broth
  • 2 cups water

Heat oil in a large nonstick pan over medium heat. Add chicken and cook about three minutes, stirring frequently. Add onion, garlic, ginger and red pepper flakes. Cook 1 to 2 minutes longer.

Transfer chicken to crock pot. Add celery, carrots, pumpkin, nectar, lime juice, peanut butter, broth and water. Stir to combine. Cover and cook on LOW for 8 hours or HIGH for 4 hours,

After the time is up, stir in the following –

3 Tablespoons rice vinegar

¼ cup chopped cilantro

Mix ½ cup heavy cream  and 1 Tablespoon of cornstarch together.Stir into soup and turn cooker to HIGH for  10 minutes or less until soup thickens.

Serve over white rice which has been previously cooked. Sprinkle with more chopped cilantro and chopped peanuts.
