Today’s Caesar salad is tomorrows Mediterranean Caesar Salad if you have left over homemade dressing…which I always do. I just substituted the Parmesan and sliced mushrooms for feta cheese and black olives. You could even add a few garbanzo beans for added protein and texture. We actually liked it better tha the original Caesar!
Mediterranean Caesar Salad
The Dressing –
- 1 ½ teaspoons fish sauce or use the traditional anchovy paste (TIP)
- 3 or 4 crushed garlic cloves
- 1 T. Dijon mustard
- 1 T. lemon or lime juice
- 1 T. red wine vinegar
- 1 egg yolk
- ¾ cup oil (NOT olive oil) vegetable oil
Blend all ingredients in a shaker,. Shake and refrigerate until needed…
The Salad –
- Romaine lettuce torn in pieces
- 2 or 3 sliced green onions
- 3 or 4 strips crisp bacon crumbled
- Black olives halved (to taste)
- Feta cheese (to taste…I like lots)
- Caesar bread crouton
- mushrooms sliced
*For more protein throw in a few canned garbanzo beans
Dont you just love that word, waterzooi ? We came across this on our trip to Brugges in 2010 when we ate at De Halve Maan Brewery and again at a very nice little restaurant called Vlaamsche Pot. Its traditionally a fish soup/stew.
Since I had some mussels and clams left over from a meal the day before, I sought out a recipe. Behold…Pinterest again. Their recipe called for several types of fish. I like fish but did not want to search out different fish, so I altered their recipe as I usually do to some extent. My version is below.
• 10,5 oz. (300 g) potatoes, peeled
• 2 tbsp (30 g) butter
• 1 celery stalk, finely sliced
• 1 carrot, finely sliced
• 1 onion, finely sliced
• 1 leek, finely sliced
• 7/8 cup (7 fl oz./200 ml) fish stock (I used chicken stock)
• 1 fish filet of your choice (I used tilapia) cut into 1 inch pieces
• 3,5 oz. (100 g) mussels, cleaned
• 1 egg yolk
• 2/5 cup (3,5 fl oz./100 ml) cream
• 3,5 oz. (100 gm ) peeled shrimp
• 1 tbsp chives, finely chopped
• Salt & freshly cracked pepper
Heat the butter in a frying pan. Add the celery, carrot and onion and cook the vegetables for 3-5 minutes, or until they are soft and glazed. Now add the leeks and cook for a further 2 minutes.
Add the stock to the vegetable mixture and allow it to infuse for 3 minutes.
Gently poach the fish fillets in the broth for 3-5 minutes. Add the mussels after 1 minute.
Remove the seafood from the pan once the mussels have opened and set aside. Strain the stock into a saucepan. Set the vegetables aside to use later.
Whisk the egg yolk with the cream in a bowl.
Put the stock back on the heat and, once it reaches boiling point, add the cream and egg mixture to thicken the stock and create a sauce. Now mix well with a whisk and make sure the sauce does not come to the boil again. Add the peeled shrimp and half the chives and stir.
Place the fish pieces and seafood in a serving bowl along with the vegetables and potatoes. Pour the sauce over it. Garnish with the remaining chives.
Serve with a crusty bread and cold beer…preferably Belgian.
So today you get two for one recipes. These went so well together I decided to share them together. First up is the baked scampi, breaded with lots of garlic and butter and a lemony flavor. It goes well with the orange and garlic in the rice, with a touch of crispiness from the celery. I see no reason why you could not substitute asparagus pieces for the celery…peas would not cut it in this recipe…LOL
Baked Shrimp Scampi (Ina Garten – Food Network)
2 pounds (12 to 15 per pound) shrimp in the shell
3 tablespoons good olive oil
2 tablespoons dry white wine
Kosher salt and freshly ground black pepper
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
4 teaspoons minced garlic (4 cloves)
1/4 cup minced shallots or green onions
3 tablespoons minced fresh parsley leaves
1 teaspoon minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 extra-large egg yolk
2/3 cup panko (Japanese dried bread flakes)
Lemon wedges, for serving
Directions Preheat the oven to 425 degrees F.
Peel, devein, and butterfly the shrimp, leaving the tails on.
Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper.
Allow to sit at room temperature while you make the butter and garlic mixture. In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.
Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish.
Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp.
Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges. …and now for the Orange Rice…
Orange Rice With Celery (Rio Caliente Hot Springs Spa – Guadalajara)
1 cup brown rice (I used Jasmine)
1 cup celery chopped
½ cup green onions chopped
2 cloves garlic chopped
2 T sunflower oil ( I used avocado oil)
1 cup water
1 cup fresh orange juice
Brown the rice, celery, green onions and garlic in the oil. When vegetables are tender, add water and orange juice. Cover. Cook 40 minutes, covered, over LOW flame. Let stand for 5 minutes. This rice dish goes so well with fish, etc.
